THE WINE

The Cuvée S of the champagne house Salon is an exceptional Blanc de Blancs (100% Chardonnay). We owe it to the dream of Eugène-Aimé Salon, who in the 1910s wanted to produce a unique champagne, the best in the world. The grapes come from a single terroir, the Côte de Blancs, and from a single cru, Le Mesnil-sur-Oger. The champagne is produced only in the best vintages. In the 20th century, this happened only 37 times - unique in the world of wine! The quantity is therefore obviously limited.
The vinification takes place according to the old tradition of Champagne. However, malolactic fermentation is not used in order to preserve the intense acidity. That is why this champagne also has excellent maturation potential. On the nose it exudes aromas of acacia and hawthorn, hazelnut, brioche and toast. On the palate it is creamy, acidic and mineral. The long finish is characterized by iodine notes. This champagne goes wonderfully with scallops, foie gras or fried St. Peter's fish.

THE SALON WINERY

Founded in 1760 by François Delamotte and owned by the Laurent Perrier Group since 1988, the Salon champagne house is unique in all its aspects. It produces only a single champagne called "S". Created at the beginning of the century, this Premier Blanc de Blancs is single-varietal (100% Chardonnay), comes from a single terroir (Côte de Blancs) and from a single winery (100% from Mesnil-sur-Oger). In fact, this champagne comes from a one-hectare plot called "Le Jardin de Salon", as well as from twenty small plots in Mesnil-sur-Oger, which were still personally selected by Aimé Salon at the beginning of the century. It is always vintage champagne that is only produced in exceptionally good years. The wine is stored on the lees for 12 years and is always manually disgorged only to order directly before delivery. Since the early days of the house, little more than thirty vintages have been marketed. This great Chardonnay is one of the most legendary champagnes and is particularly sought after by foreign lovers (80% of sales are generated outside France).
