This husband and wife team aims to produce the small scale, vineyard specific style of Rioja made before the phylloxera invasion, and the arrival of the Bordelais in the region. This dry white is made from 90% Viura with 10% Garnacha Blanca from the town of Galbarruri. Whole bunches are pressed slowly and aged in used French demi-muid for one year. Pair this full-bodied, crisp white with trout in mushroom sauce.
