This wine is the blend of several plots of the Mercurey appellation of the Côte Chalonnaise, composed of Old Vines that are on average more than 40 years old. The wine is made from vines chosen for their south-east exposure and their location in the middle of the hillside in order to obtain optimal maturity and a lot of complexity. The soils are rich in red clay with a marked presence of limestone. This composition gives the wine a lot of power and depth.
Cold pre-fermentation maceration for 7 days. Controlled fermentation – duration 16/18 days. Punching down and pumping over allow for a gentle and thorough extraction. The aim is to achieve complete colour extraction and the presence of the most elegant tannins. Aged in barrels for 12 to 18 months.
