Winemaking
For the Les Clos cuvée, the grapes are picked at their maximum phenolic ripeness, the vatting lengthens, the pressing is even more tender, the ageing in barrels reveals the richer materials. A selection of the best Pinot Noir barrels, from our best terroirs, the three Clos of Château de Vaux are reserved for longer maturation, for 100% in new barrels. It will take 16 months for the tannins of the wine to be dressed in silk, for its aromas to powder with spices, for the bouquet to blossom.
In order to preserve its personality, this wine is bottled without fining and without filtration.
Some tasting notes
Château de Vaux Pinot Noir Les Clos is a very colourful, purplish-red wine. The nose is powerful and complex: cocoa, roasting very quickly give way to notes of sweet spices, cinnamon... The palate offers a refined substance, with silky tannins, the density of this wine is exceptional. The fruitiness is available in black: wild blackberry, black cherry, liquorice dominates the finish, all revealing an elegant wine.
Appetizers
To be paired with flavours combining power and refinement: doe steak with cocoa beans, beef stratum (Lorraine) and foie gras (Lorraine), partridge in cabbage leaves, rabbit barberry... without forgetting the mature cheeses, a Langres will be perfect!
