Winemaking
The harvest is done manually. The grapes are put in vats after de-stemming.
The grapes macerate for three weeks with daily punching down. After the long vatting, the press juice is drawn and the pomace is pressed. Free-run juice and press juice are blended. The wines are aged 100% in barrels of different origins, different ages and different toasting. The goal is complexity but in no way advanced aromatization. Ageing in barrels is 12 months. The blending and bottling at the Château took place at the end of September.
Some tasting notes
Château de Vaux Pinot Noir Les Hautes-Bassières is a wine with a light ruby colour. The nose reconnects with the aromas of morello cherry and cherry, dear to Pinot Noir. On the palate, the tannins are silky, shimmering, subtle on a flowery aromatic finish, all in lightness.

Favor tasty and elegant dishes: rabbit with prune juice and spices, squabs and Jerusalem artichoke carpaccio, coq au vin, chicken with morels, breaded brie croquettes.
