Wine Production
The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 30-60% for the premier crus.
Tasting Notes
The wine shows aromas and flavors of red berries, herbs, and purple flowers. The palate is rich with ripe fruit and medium weight with bright acidity and fine tannins. Aging in 30-60% new Burgundian pièce brings notes of vanilla, toast, and baking spices.

Domaine Jean Grivot Nuits-St-Georges Roncière pairs wonderfully with grilled venison or mushroom-stuffed pork tenderloin, accentuating its rich texture, deep fruit, and earthy complexity.

These old vines approaching 80 years in age (Mathilde says the family keeps hoping for one more vintage every year) offer an exotic nose with licorice, black cherry preserves and smoky minerality. They sit in well-drained soils, and there is grip and vague dryness in the tannins given the stress of the growing season. The fresh oak is artfully integrated and tangles tastefully with the fruit well into the long, savory finish. (04/2025)
