Made from the 13 grape varieties of the appellation, predominantly Grenache, this supple yet powerful wine develops aromas of small red fruits with soft tannins. It can be aged for 5 to 8 years in an average cellar.
The Saje estate is a family vineyard established on nearly 7.5 hectares. Jérôme MATHIEU, the current winemaker, from more than 9 generations of winemakers in the Châteauneuf du Pape appellation, works his vines, harvests his plots at maturity, vinifies his wines and markets them.
The vines have been planted for several generations with all the grape varieties authorized by the 1936 appellation decree (which number 13). The estate comprises 23 plots spread across the commune of Châteauneuf-du-Pape, and 3 in the commune of Orange. The soils are worked entirely without herbicides to ensure the best possible transmission of the terroir to the vines, respecting nature.
When the harvest arrives, a team of about 10 harvesters comes to lend a hand to the winemaker to collect this harvest entirely by hand.
The winemaking takes place in the family's ancestral cellar, located in the heart of the village of Châteauneuf du Pape, the aging follows in a traditional manner, in old oak casks before bottling some 12 to 18 months later.
