The grapes are from the estate vineyard, mainly classified AOP Sainte-Victoire with 10% classified Côtes de Provence. There are 60 hectares of vines mixed within 20 hectares of woods and cereals. Respect for biodiversity, the environment, and the people working in the vineyard are main values of the family. Limestone Organic farming Grapes are picked at rising maturity in the early mornings during harvest. This is fol-lowed by de-stemming, crushing, and a short skin maceration of 1-2 hours.
