Winemakers Notes
Strength and Power ...This lieu-dit has a prestigious place with the Brouilly Appellation. Complex soils of granites of Carboniferous origin.Purple in color with aromas of black berries associated with sweet spices and cocoa hint. A lot of density with this fleshy lieu-dit whose power will yield, with a little maturity, to elegance.
From vineyard to glass: Sustainable vine growing certified HEV3 (High Environmental Value Level 3 - which is the highest grade). The grape is Gamay Noir. Average 60 years of age. Vineyard planted with a density of 12,000 feet per hectare. Deep carbonized silicious rock soil. Grapes are manually harvest and de-stemmed (about 50%). Maceration in controlled temperatures (under 30°C for 14 days). Reared in vat and bottled in April.
Food and wine pairing: Puff pastry with snails - Rib of beef and "Gratin Dauphinois"- goat and/or cow cheeses - Black Forest
