Sclavos, as a winery, has taken a wholistic approach to their winemaking and vineyard practices. Demeter certified, a robust diversity of flora and fauna in and around the vineyards plus low intervention techniques in the cellar are the practices they use to arrive at such a singularly mineral-driven style of whites and reds. "Vino di Sasso" or "Wine of Stone" is an apt name for this cuvée. When you examine the area of Cephalonia that the Sasso comes from, it is marked by its limestone soils which directly translate into the wine. No fining, no filtration and minimal sulfties and you have a pure expression of this emerging and noteworthy region. Biodynamic farming
